coconut pecan granola



i love this super easy recipe for homemade granola! you can change it up to suit your tastes so easily. it comes together in 20-25 minutes and is awesome in cereal, yogurt, or all on its own! please give it a try :)
as a sidenote: you can use just regular ol' plain rolled oats for this recipe, but if you have a trader joe's near you, i highly recommend subbing 1.5c of the plain oats for this stuff! it's got chia seeds, flax - you know, all that healthy stuff that's way too expensive to buy individually!



anyway! let's get started!

ingredients:
3 cups rolled oats
1 cup coconut flakes
1 cup pecans
1 cup pure maple syrup
1/4 cup melted coconut oil
1 tsp ground cinnamon
1/4 tsp kosher salt
3 tbsp of your favorite nut butter

directions
preheat your oven to 350F/180C
throw literally all the ingredients in a big ol' bowl and mix super thoroughly with a spoon (you can use your hands if you want that sensory experience, but it gets REAL sticky)
spread the mixture evenly across a baking sheet (cookie sheets work just fine!)
bake for about 10 minutes, then use tongs to mix thoroughly so everything gets evenly toasted! pay special attention to the mixture towards the edges of the sheet - in my experience, that always toasts the quickest!
pop it back in the oven for another 10-18 minutes (i usually check it at 10, mix again, then keep an eye for the remaining 8)
take it out and let it cool down (it cools super quick)!
use a metal spatula to break it up and transfer to an airtight container. enjoy!
